Walnut Cheddar Pastries

Ingredients and Preparation

  • In a bowl combine
    • 1½ cup sifted flour
    • ¾ cup grated sharp Cheddar cheese
    • ½ teaspoon salt
    • ⅛ teaspoon cayenne
  • Add
    • 1 stick of butter cut into bits and knead the mixture until it is smooth.
  • Chill for 1 hour
  • Roll it ¼ inch thick on a lightly floured surface.
  • Press
    • finely chopped walnuts into the dough and
  • cut into rounds with a 1½ inch cutter
  • arrange the rounds on baking sheets and
  • bake in a preheated moderatly hot oven (375°) for 15 minutes, or until they are golden.

Notes * This recipe dates back to the Hocking Ave Days, I believe. For the modern quicker, easier, less messing around, albeit without walnuts version, see: SharpCheddarPastries.
