Salmon Mousse '88

Ingredients

  • 1 T gelatin
  • 3 T cold water
  • 1 can condensed zesty tomato soup
  • 6 oz cream cheese
  • 1 can (15½ oz.) pink salmon
  • 1 cup celery, finely chopped
  • 1 cup green onion, finely chopped
  • ¼ cup parsley, minced
  • 1 cup safflower mayonnaise
  • 2 t Cajun seasoning

Preparation

  • In a mixing bowl dissolve gelatin in cold water.
  • Heat soup and cream cheese in a saucepan until smooth, stirring constantly.
  • Pour into gelatin bowl along with remaining ingredients.
  • Mix well.
  • Chill
