Apple Shallot Salad Dressing

Ingredients

  • 1/4 cup maple syrup
  • 4 tbsp vinegar
  • 2 tbsp mustard
  • 1/2 cup oil
  • salt and pepper to taste
  • 1 large shallot, finely minced
  • 1/2 cup apple

Preparation

  • In a bowl, stir together syrup, mustard, and vinegar;
  • Add oil in a steady stream, whisking the whole time so it emulsifies.
  • Salt and pepper to taste.
  • Throw in shallot and apple and stir.

Notes

  • All measurements are approximations! Taste the dressing to make sure it's how you like it and change accordingly.
  • Use a light vinegar like apple cider, raspberry, or chardonnay.
  • Stoneground mustard works best.
  • Grapeseed or Canola oil is best.
  • I like Granny Smiths best, and I usually use half the apple, no matter how much that turns out to be.
