Ingredients
- 1/4 cup maple syrup
- 4 tbsp vinegar
- 2 tbsp mustard
- 1/2 cup oil
- salt and pepper to taste
- 1 large shallot, finely minced
- 1/2 cup apple
Preparation
- In a bowl, stir together syrup, mustard, and vinegar;
- Add oil in a steady stream, whisking the whole time so it emulsifies.
- Salt and pepper to taste.
- Throw in shallot and apple and stir.
Comments
- All measurements are approximations! Taste the dressing to make sure it's how you like it and change accordingly.
- Use a light vinegar like apple cider, raspberry, or chardonnay.
- Stoneground mustard works best.
- Grapeseed or Canola oil is best.
- I like Granny Smiths best, and I usually use half the apple, no matter how much that turns out to be.
